Coconut roll

Now that Christmas is over and all the food is gone and most people decided to lose weight as their new year’s resolution, I think that everyone needs to treat themselves to a sweet or a cake. That’s why I decided to share a recipe for one of my favourite cakes with you. It’s easy and quick to make without baking.

You will need:
150 grams of coconut flour
4 tablespoons of icing sugar
6 tablespoons of boiling water
150 grams of margarine
350 grams of grounded petit beurre biscuits
4 tablespoons of caster sugar
16 tablespoons of hot black coffee
4 tablespoons of cocoa powder
piece of aluminium foil

First, you need to make the dough, you will need biscuits, caster sugar, coffee and cocoa powder.

Take 350 grams of petit beurre biscuits and ground them in a blender or nutribullet or you can use a roll pin and crush them until you get fine powder of biscuits. Once you’ve done that put them in a bowl where you plan to make the dough.

Next, add 4 tablespoons of caster sugar and mix it with the crushed biscuits with a spoon.

Then add 4 tablespoons of cocoa powder. Or you can use powder for making hot chocolate, depending on your preference.

After all the dry ingredients are combined, you need to make coffee. I made strong Nescafe using 4 tea spoons of coffee and 200 ml of boiling water. I didn’t add sugar because the mixture is already sweet enough, at least to me, but if you like you can add sugar to the coffee.

Add 16 tablespoons of hot coffee to the mixture of dry ingredients and mix it all together.

Once the ingredients are mixed you need to get your hands dirty and kneed the dough a bit until you form nice and smooth ball of dough like you would do when making cookies. If there are bits of biscuits in it, don’t worry, it won’t ruin the roll.

When the dough is done, take a larger piece of aluminium foil and lay it on the table. Sprinkle a bit of caster or grounded sugar on it and then using a rolling pin, roll the dough all over it. Be careful to make it into a something similar to square so that you call roll it easier later. Again it doesn’t need to be a perfect square, the edges just need to be fairly equal.

 

 

 

 
Once the dough is done, we make the filling. You will need the remaining ingredients: Coconut flour, icing sugar, margarine and hot water.

Take 150 grams of margarine (I used vanilla flavoured one) and put it into a kitchen aid or use an electric mixer to beat it until smooth.

Then mix 4 tablespoons of icing sugar and 150 grams of coconut flour and add it to the margarine. Mix it until the ingredients combine.

After that add 6 tablespoons of boiling water and mix for a minute.

Once the filling is done, use the spatula to spread it over the dough. Try to spread the filling equally.

Once that is done, use the edges of the foil to roll the dough and make a roll. Press the edges of the roll together so that the filling doesn’t come out. Roll it in the foil and leave it to set for an hour or two.

And voilà!! You’ve got an easy and quick coconut roll without baking.
